Here is a collection of recipes that I have compiled for my
friends, but of course all are welcome to them! This is just my way of saying thank you to those of you that mean so very much to me.
Chicken Madras
Pour oil into the bottom of a large saute pan and place over high heat. Add all of the ingredients to the pan and saute, stirring well, for approximately 5 minutes. Reduce heat to medium and continue cooking for another 10 minutes, stirring occassionally. If necessary, add a few teaspoons of water. Cover and reduce heat to low, and simmer for 30 minutes, stirring occassionally. Serve over hot rice.
*garam masala, which literally means "hot mixture" is used predominantly in Indian cuisine, and consists of a combination of roasted spices, including black pepper, chili pepper, and coriander, which is ground together. You can find this in the international section of your local supermarket.
New York Style Cheesecake
Preheat oven to 325f. Combine crust ingredients together and press into the bottom of a 9 inch springform pan. Bake 10 minutes. Beat cream cheese, sugar, flour and vanilla with hand mixer til well blended. Add eggs, one at a time, mixing well after each addition. Mix in sour cream. Pour into crust. Bake 1 hour 10 minutes, or til center is slightly set. Run knife around side of pan to loosen. Cool before removing side of pan. Refrigerate at least 6 hours before serving. Serve plain or with the fruit topping of your choice.
Quick Vodka Blush Sauce
Heat marinara sauce in saucepan til bubbling, reduce heat. In mixing bowl, whisk together cream and vodka. Whisk cream and vodka mixture into marinara sauce and heat thoroughly. Simmer approxiamately 15 minutes. Serve over your favorite pasta.
Muesli
Preheat oven to 325f. Spread oats out on baking sheet and toast in oven about 10 minutes. Place in large bowl. Spread coconut and almonds onto baking sheet and toast in oven about 5 minutes, place in bowl with oats. Stir in remaining ingredients and mix well. Cool and store in an air tight container.
